SPINACH MADELEINE 
2 pkgs. frozen spinach, chopped
4 tbsp. butter
2 tbsp. flour
2 tbsp. onion, chopped
1/2 c. evaporated milk
1/2 c. veg. liquor (liquid from cooked spinach)
1/2 tsp. black pepper
3/4 tsp. celery salt
3/4 tsp. garlic salt
Salt to taste
6 oz. hot pepper cheese
1 tsp. worcestershire sauce
Red pepper to taste

Cook spinach. Drain. Reserve liquor. Melt butter in a saucepan over low heat. Add flour, stirring until blended and smooth but not brown. Add onion and cook until soft but not brown. Add liquid slowly, stirring to avoid lumps. Cook until smooth and thick, continue to stir. Add seasonings and cheese (cut cheese into small pieces). Stir until melted. Combine with spinach. Put in casserole. Top with buttered bread crumbs. Heat 30 minutes at 350 degrees.
