TUNA CASSEROLE | |
2 tsp. corn oil 1/2 tsp. thyme 2 c. sliced mushrooms 4 c. cooked brown rice 1 onion, chopped 6 1/2 oz. water packed tuna 1 stalk celery, chopped 1/2 lb. poached fish fillets, flaked 1 clove garlic, crushed 1/2 c. grated mild, Cheddar cheese 2 tbsp. basil 1/2 c. yogurt mixed with 2 tbsp. Parmesan cheese In a large mixing bowl, combine the rice, tuna, fish and the mushroom mixture. Place in a deep casserole dish and cover with the yogurt/Parmesan mixture. Bake in a preheated 350 degree oven 30 to 45 minutes, until hot and bubbly. Makes 6 servings. |
