JAM PUDDING 
2 c. milk
2 tbsp. butter
1 1/2 c. fresh bread crumbs
2 tbsp. sugar
Grated rind of 1 lemon
2 eggs, separated
2 1/2 tbsp. sugar
1/2 c. jam

1. Put butter in a saucepan with the milk and bring to a boil.

2. Mix bread crumbs, sugar and grated rind and pour hot milk mixture over it. Mix well. Cool.

3. Add beaten egg yolks, blend well and pour into an oven proof dish. Bake in a 350 degree oven until set.

4. Beat the egg whites until stiff. Beat in the sugar.

5. Melt the jam in a small saucepan and spread over the top of the bake pudding. Spread the meringue on top and bake in a 300 degree oven for about 30 minutes or until the meringue is crisp. Serves 6.
