IRISH POTATO CAKE 
1/4 c. butter
2 c. sugar
4 eggs
1 c. mashed potato
2 c. flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. cocoa
1 tsp. cinnamon
1 tsp. allspice
1/2 c. milk
1 tsp. lemon extract
1 tsp. vanilla extract
1 c. nut meats
1 c. raisins

Cream together butter and sugar. Add eggs, potatoes, and beat well. Sift together flour, baking powder, salt, cocoa, and the spices. Add to the creamed mixture and beat. Add milk and flavorings and beat well. Stir in the nuts and raisins. Bake in greased and floured tube or bundt pan for 1 1/4 to 1 1/2 hours at 325 degrees.
