IRISH POTATO CAKE 
2 c. granulated sugar
1/2 c. creamed butter
1 c. warmed mashed potatoes
4 eggs, beat yolks and whites separately
1/2 c. milk
2 c. flour
4 tbsp. chocolate
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
2 tsp. baking powder
1 c. chopped nuts

Cream sugar and butter until light and fluffy. Add potatoes, continue beating. Add beaten egg yolks and mix well. Sift dry ingredients together alternately. Blend milk and dry ingredients. Fold in egg whites and nuts. Turn into 3 greased and floured 9-inch layer cake pans. Bake at 350 degrees for about 40 minutes or until toothpick comes out clean.
