ORANGE FRUIT RING SALAD 
1 tbsp. grated orange rind
1 c. diced orange sections
1/4 c. sugar
3/4 to 1 c. fruit juice (from pineapple)
1 pkg. orange Jello
1 c. boiling water
12 chopped maraschino cherries, quartered
1 c. drained pineapple chunks

Grate orange rind and reserve. Combine cut up oranges and sugar and let stand 10 minutes. Drain oranges and sugar and add pineapple juice to make 1 cup. Dissolve Jello in 1 cup boiling water and add juice mixture and rind and let partially set. Then add cherries and pineapple chunks. Chill to set. Serves 8.
