GOLDEN RING SALAD 
1 can (16 oz.) pineapple chunks, drained
2 env. Knox unflavored gelatin
1 can (11 oz.) mandarin oranges, drained
1 c. boiling water
1/4 c. lime or lemon juice

In blender or mixer, sprinkle unflavored gelatin over syrup reserved from pineapple chunks and mandarin oranges when they were drained. Let stand 3-4 minutes. Add boiling water and beat at low speed until gelatin is completely dissolved, about 2 minutes. Add pineapple, mandarin oranges and lime or lemon juice, process at high speed until fruit is pureed, about 2 minutes. Pour into 4 cup ring mold and chill until firm.

To serve, unmold onto a serving platter. Mound your favorite chicken or seafood salad in center. Makes about 8 to 10 generous servings.
