CARROT CAKE - PAM'S 
2 c. sugar
4 eggs
1 1/3 c. oil
2 c. flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. salt
1 tsp. nutmeg
4 c. grated carrots
3/4 c. walnuts

Cream sugar, eggs and oil. Sift dry ingredients and add to mixture. Add carrots and nuts. Bake in greased loaf pans at 350 degrees for 35 to 40 minutes. Ice with cream cheese icing. Also makes nice cake in tuber pan.

CREAM CHEESE FROSTING - PAM'S
1/2 c. butter
16 oz. cream cheese
1 lb. powdered sugar
1 tsp. vanilla

Cream butter and cheese, add sugar and vanilla. Add milk if needs to be thinned.
