CRANBERRY LOAF 
Juice of 1 lg. orange
3 tbsp. melted butter
1 c. sugar
1 egg
2 1/4 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 c. fresh cranberries
1/2 c. walnuts

Heat oven to 325 degrees. Put the orange juice in a measuring cup. Add enough water to 3/4 cup. Add the melted butter and set aside. In a bowl, mix together the sugar and egg until thick and lemon-colored. Stir in the orange juice. Put the flour, salt, and baking soda in another mixing bowl. Add the cranberries and walnuts and gently mix them in the flour until they are well coated. Make a well in the center of the dry ingredients and stir in the liquid ingredients. Stir until ingredients are mixed. Pour the batter into the 9 x 5 x 3 inch loaf pan. Bake for 1 hour and 10 minutes. Test the center of loaf by inserting a toothpick, if it comes out wet, bake for another 5 minutes.
