BASIC TOMATO SAUCE 
2 tbsp. olive oil
1 sm. clove garlic, minced
1/4 c. finely chopped onion
1 (8 oz.) can tomato sauce
1 (16 oz.) can tomatoes
1 sm. can tomato paste
1/2 tsp. dried oregano leaves
1/2 tsp. dried basil leaves
1/2 tsp. dried thyme leaves
2 tsp. sugar
1/2 tsp. salt
Few grains pepper

Heat olive oil in large saucepan over moderate heat (about 250 degrees). Add garlic and onion and cook until lightly browned. Add the remaining ingredients and mix well. Cover and simmer over moderately low heat (about 225 degrees) 1 1/2 hours, stirring occasionally. Makes 4 cups sauce.
