PINEAPPLE-ORANGE SUNSHINE CAKE 
yellow cake mix
1/4 c. applesauce
4 eggs
11 oz. can Mandarin oranges
1 (8 oz.) Cool Whip
1 pkg. instant vanilla pudding
1 (15 oz.) crushed pineapple
1 (11 oz.) can Mandarin oranges, drained

Mix cake mix, applesauce, eggs and syrup from Mandarin oranges for 2 minutes by hand. Then fold in one can of Mandarin oranges.

Bake at 350°F for 30 to 40 minutes in 9 x 13-inch pan.

For frosting mix Cool Whip, vanilla pudding, crushed pineapple and one can Mandarin oranges together. Spread on cooled cake. Garnish with Mandarin oranges and sprigs of mint.
