LIMA BEAN CASSEROLE | |
2 pkgs. frozen lima beans (dried, cooked may be used) 1 med. onion 5 stalks celery 1/2 lb. butter 2 cans mushrooms 2 tbsp. flour 1/2 tsp. salt 1/2 tsp. nutmeg 1/8 tsp. pepper 1/2 c. heavy cream 1/2 c. sherry Cook lima beans as directed. Mince onion and cut celery in 1/2 inch pieces. Saute onion and celery in butter until golden brown, then add mushrooms. Sprinkle in flour, salt, nutmeg, and pepper; stir until well blended. Reduce heat and add cream. Add to cooked, drained beans. Add sherry; sprinkle paprika on top. Heat in 350 degree oven, about 20 minutes. |
