RISOTTO 
My mother-in-law made wonderful Risotto. I don't have her recipe, but this is very good.

1 med. onion, finely chopped (can omit)
1 stick butter
2 c. rice
4 c. chicken broth
1/2 c. white wine
1/4 tsp. saffron
Parmesan cheese

Heat broth. Keep it at a simmer. Saute onion in butter, DO NOT BROWN. Add rice and cook low until coating all the grains. Add the wine. Cook slowly, stirring occasionally until wine is absorbed. Ladle 3/4 cup broth onto rice and cook slowly until absorbed. Continue adding 3/4 cup at a time, cooking slowly until absorbed and all broth is used. Add saffron. Serve with cheese.
