WHOLE WHEAT CARROT-BANANA BREAD 
1/2 c. butter
1 c. packed brown sugar
2 eggs
1 c. all-purpose flour
1 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1 c. ripe mashed bananas
1 c. finely shredded carrots
1/2 c. chopped walnuts
1/2 tsp. salt

In a mixer bowl beat butter 30 seconds. Add sugar; beat until fluffy. Beat in eggs. Combine flours, soda, baking powder, cinnamon and salt in a bowl. Add dry ingredients and bananas alternately to butter mixture, beating after each addition. Fold in carrots and nuts.

Pour into two greased 7 1/2 x 3 3/4 x 2 inch loaf pans. Bake at 350 degrees in oven for 40 to 50 minutes. Also will make muffins. If making muffins cook for 20 minutes.
