"DIABETIC" RAISIN CAKE 
1 c. raisins
Liquid sugar substitute equal to 3/4 c.
3 lg. egg whites
1/2 c. oil
1 1/2 tsp. vanilla
1 c. unsweetened applesauce
2 c. plain flour
1 tsp. each baking soda and powder
1/4 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt

Cover raisins with boiling water; let stand 5 minutes. Drain. Place raisins in mixer bowl; add sweetener, egg whites, oil, vanilla, and applesauce. Mix at medium speed for a few seconds. Blend remaining dry ingredients well and add to raisin mixture. Mix well. Spread in a 9 x 13 inch pan which has been greased. Bake at 350 degrees for 35-40 minutes or until well brown and sides have drawn away from sides of pan. Yields: 20 pieces.

If on a low sodium diet, omit the salt.
