MUSSELS WITH ORANGE MAYONNAISE 
2 dozen lg. mussels, scrubbed
1 orange
3 tbsp. mayonnaise

Place mussels in heavy pot, cover tightly and cook over medium heat 5 to 6 minutes until mussels open. (Discard mussels that don't open.) Drain mussels, detach from shells, then replace in shells and chill briefly.

Peel orange without cutting into the white pith underneath. Slice peel into thin strips. Drop strips into boiling water for 2 minutes. Drain and cool.

Combine mayonnaise and juice of orange. Dab sauce on mussels in their shells, garnish with orange peel and serve cold. Serves 4-6.
