PASTA SALAD 
1 (16 oz.) pkg. pasta coils, multi colored if desired
1 med. red onion, cut into rings
1 med. bell pepper, chunked
1/2 c. chopped parsley
1 bunch green onions, finely chopped
1 c. Wishbone Dijon dressing
1/4 c. water
Salt & pepper to taste
1/2 lb. thickly sliced salami, quartered
1/2 lb. Mozzarella cheese, cut into 1/2" cubes
1 sm. head broccoli, cut into florets
1 sm. head cauliflower, cut into florets

Cook pasta according to directions, blanch and drain well. Add 1/2 cup of the dressing and set aside.

Put the other 1/2 cup of dressing in a large salad bowl. Add the vegetables, water, salt and pepper and stir well. Add the salami and cheese and mix gently. Add cooked pasta and mix gently.

Chill thoroughly. Stir and add more dressing just before serving if desired. Salad keeps very well.

Instead of salami, cheese and broccoli-cauliflower combination. Try 1 pound crabmeat marinated in 1/2 cup lemon juice, snow peas and other oriental vegetables or 1 pound shrimp marinated in 1/2 cup lemon juice, zucchini, cherry tomatoes, cucumbers, etc.
