LAOTIAN SWEET POTATO CAKE 
1 lb. grapes
1 c. rum
1/2 lb. grated coconut
3 lbs. boiled sweet potatoes
3 c. water
1 tsp. butter
1 tbsp. oil
3 eggs
Pinch of salt
Vanilla, cinnamon, and nutmeg to taste

Soak the grapes in the rum. Bring 3 cups of water to boiling, and then turn the heat off. Place the coconut in the water, and then cover. After about 1/2 hour, drain off the coconut milk and put aside.

Boil the sweet potatoes, and then mash them thoroughly. Add the coconut to the mashed sweet potatoes. Then add the butter, oil, vanilla, cinnamon, nutmeg, salt, and eggs. Mix well. Add the grapes and rum, and mix thoroughly.

Pour the mixture into a buttered pan, and place in a medium high oven (375 degrees) for about 45 minutes to 1 hour.
