FRIED EGGPLANT 
1 eggplant
1 egg
Flour (self-rising)
Salt
Pepper

Peel and cube eggplant. Boil until tender. Drain. Mash eggplant with fork. Add beaten egg, salt, pepper and enough flour to make eggplant hold together. Drop mixture by teaspoon into deep hot oil and fry as you would oysters. Serve hot.
