SUPER RICE SALAD 
1 1/2 c. water
1 1/2 c. instant rice
1/2 c. chopped celery
1/4 c. chopped dill pickles
1 tbsp. chopped onion
1 tbsp. chopped parsley
1/2 tsp. dry mustard
1 c. mayonnaise
Salt and pepper to taste
1 sm. jar pimento (optional)

Cook rice with amount of water specified, following directions on rice box. Mix remaining ingredients with cooked rice and chill at least one hour or overnight.
