SUPER SUNRISE SALAD | |
2 (3 oz.) pkg. or 1 (6 oz.) pkg Jell-O brand lime flavor gelatin 1 c. cold water 2 med. Sunkist oranges 2 c. water 2 cinnamon sticks 20 whole cloves 1/4 c. seedless grape (halved) 1 (8 oz.) pkg. cream cheese (softened) 1/4 c. shredded carrot Grate 2 teaspoons orange peel, then peel oranges. Cut one orange into slices, cut slices in half. Cut second orange into bite-size pieces. Bring water and spices to boil, simmer 10 minutes. Discard spices. Add boiling water to make 2 cups. Add gelatin and stir to dissolve. Add cold water. Chill until thickened. Pour 1 1/2 cups gelatin into 6 cup mold. Arrange orange half-slices in gelatin. Add grapes. Chill until set but not firm. Blend remaining gelatin into cheese. Add carrot, orange pieces and peel. Chill until thickened. Spoon into mold. Chill at least 4 hours. Unmold. Garnish. 10 servings. |
