BEER BATTER FISH
2 lb. fish fillets
1 (12 oz.) can of beer (beat if flat)
1 egg
2 c. "Bisquick"
1 tbsp. lemon juice
1 tsp. sugar
1/4 tsp. paprika
1/4 lb. crushed crackers (use rolling pin)

Put all ingredients in medium size bowl (except fish). Mix completely until batter is like a thin pancake batter. Cut fillets of larger fish into strips about 1/2 inch thick. Put fish in batter for about 15 minutes. While fish are soaking, put crackers (crushed) in 9 inch cake pan and heat oil in deep fryer or deep skillet to 375 degrees. Take fish out of batter one piece at a time allowing excess batter to drip off. Coat fish with cracker crumbs. When you have enough coated, put in hot oil (be sure oil is 375 degrees). Cook in oil until golden brown (about 2 to 3 minutes). When fish are done put in bowl lined with a few paper towels. Serve hot with lemon and tartar sauce.
