RHUBARB CRUMBLE | |
3 cups diced rhubarb 2 tablespoons orange juice 3/4 cup sugar 1/4 teaspoon cinnamon 1 tablespoon butter Topping: 1/4 cup melted vegetable shortening 1/3 cup brown sugar 2/3 cup all-purpose flour 1/8 teaspoon salt 1/4 teaspoon baking soda 2/3 cup oatmeal Preheat oven to 375°F. Arrange rhubarb evenly in a buttered 8x8-inch baking pan. Sprinkle with sugar, orange juice, cinnamon, and dot with butter. Sift together dry ingredients, add shortening and brown sugar and spread over rhubarb. Bake for 45 minutes.
