BARBECUED CHICKEN STATESVILLE,
NC STYLE
 
1 chicken (fryer or broiler), cut up
1 c. water
1/2 tsp. salt (or less if desired)
Pepper to taste
1/2 c. celery, chopped
1 med. onion
3 tbsp. butter
3 tbsp. Worcestershire sauce
2 tsp. salt
2 tbsp. vinegar
1/2 c. brown sugar

Skin chicken pieces. Lay flat in pan. Sprinkle with salt and pepper. Pour 1 cup water over chicken. Broil until browned lightly. Saute celery and onion in butter. Add Worcestershire sauce, vinegar and brown sugar. Pour pan drippings from chicken into sauce. Mix and bring to a boil. Pour sauce over chicken and bake at 350 degrees for 1 1/2 hours or until tender, keeping covered for first hour.
