RHUBARB COFFEE CAKE | |
1/2 c. butter 1 egg 1 tsp. vanilla 2 c. flour 2 c. finely cut rhubarb 1 1/2 c. sugar 1 c. buttermilk 1 tsp. baking soda Pinch of salt Mix in order given. Fold in rhubarb last. Top with 1/2 cup sugar and 1 teaspoon cinnamon (sprinkle on top of batter). Bake at 350 degrees for 35 to 40 minutes in 9"x13" pan. |
