RHUBARB CAKE | |
3 c. flour 1/2 tsp. salt 2 c. sugar 2/3 c. butter 2 eggs 2 tsp. baking soda 1 c. cold coffee 1 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. nutmeg 1 c. raisins (white or dark), cut up 2 c. rhubarb, cut finely Cream sugar and butter. Add eggs. Sift all dry ingredients and add with cold coffee. Add rhubarb and raisins last. Put in 9 x 13 inch pan, greased and floured. Mix 2 tablespoonfuls white sugar and 1 tablespoon brown sugar and sprinkle on cake before baking. Bake at 350 degrees for 1 hour. No frosting necessary. |
