PEACH AND CHICKEN SALAD 
1 (12 oz.) pkg. frozen rice pilaf
1/4 c. chopped green pepper
1/4 c. mayonnaise or salad dressing
2 tbsp. sliced green onion
1/2 tsp. curry powder
1 (16 oz.) can sliced peaches, drained
1 c. cubed, cooked chicken

Prepare rice according to package directions; cool in mixing bowl. Stir in green pepper, mayonnaise, green onion and curry. Add peaches and chicken; toss lightly to coat. Chill. Serve in lettuce cups, if desired. Makes 4 servings.
