CRANAPPLE WALNUT CAKE 
1 3/4 c. light brown sugar
1/2 c. vegetable oil
2 c. all purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. salt
2 eggs
1 tsp. vanilla
2 c. sliced cooking apples
1/2 c. walnut pieces
1/2 lb. fresh whole raw cranberries

Preheat oven to 350°F. Cream together the oil and sugar. Add eggs and vanilla and beat well. Sift together flour and dry ingredients. Add to the first mixture and stir until combined. Stir in apples, cranberries and nuts.

Bake in a well greased 9 x 13 pan for 45-50 minutes.
