SHRIMP STUFFED 
4 fish (about 1 lb. each)
1 lb. cooked shrimp
1 egg, well beaten
1/2 tbsp. salt
Dash pepper
3 tbsp. sherry
1 c. heavy cream

Split the cleaned fish, leaving head and tail intact. Place in an oiled shallow baking pan. Work shrimp through a food grinder, then combine with egg, salt, pepper, sherry and half of the cream. When well blended, stuff fish cavities with mixture. Pour remaining cream over all and bake in an oven at 350 degrees for 40 minutes. Baste occasionally.
