PRIZE-WINNING WHITE BREAD
3/4 c. lukewarm milk
3 1/2 tbsp. shortening
4 1/2 tbsp. sugar
1 1/2 tbsp. salt
2 pkgs. active dry yeast
8 1/2 c. sifted flour

Combine milk, shortening, sugar and salt. Combine yeast with 4 1/2 cups flour. Add to milk mixture. Beat with electric mixer at medium speed until smooth, about 2 minutes or beat with a spoon until batter is smooth.

Gradually add enough remaining flour to make a soft dough that leaves the sides of the bowl. Turn out on floured surface and knead until smooth and satiny, about 8-10 minutes.

Place dough in lightly greased bowl; turn over to grease top. Cover and let rise in warm place until doubled about 1 1/2-2 hours. Punch down and let rise again until doubled, about 45 minutes.

Divide dough in half. Shape each half into a loaf and place in 2 greased 9 x 5 x 3 inch loaf pans. Let rise until doubled, about 45 minutes. Bake in 400 degree oven 35 minutes or until loaves sound hollow when tapped. Remove from pans. Makes 2 loaves.
