FRUIT COFFEE RING (DELICIOUS
WITH COFFEE)
 
1 cake yeast
1/3 c. sugar
2/3 c. warm milk
3 1/2 to 4 c. sifted flour
1/2 c. melted butter
3 eggs
3/4 tsp. salt
2 tbsp. butter
1 tsp. cinnamon
3 c. apples, diced

Dissolve yeast and sugar in warm milk. Add 1 cup flour and beat until smooth. Add melted butter, beaten eggs, remaining flour and salt. Beat until smooth. Place in warm spot and allow to rise until double in size. Punch down; roll to 1/2 inch thickness on floured board to an oblong 9 x 18 inches. Spread with butter, sprinkle with brown sugar and cinnamon, add apples, and roll as for jelly roll. Seal ends together. Cut air holes in roll at 1 1/2 inch intervals. Let rise about 2 hours or until double in bulk. Bake at 375 degrees for 25 to 30 minutes.
