CHEESECAKE SQUARES 
1 (15 oz.) can sweetened condensed milk
1/2 c. lemon juice
1 tbsp. grated lemon peel
2/3 c. shortening
1 1/2 c. quick-cooking rolled oats
1 c. brown sugar, packed
1 3/4 c. flour
1/2 tsp. baking soda
1 tsp. salt

Heat oven to 375 degrees. Blend milk, juice and rind until thickened. Mix shortening and sugar. Stir dry ingredients together; blend into shortening mixture. Blend in rolled oats. Place half of crumb mixture in greased oblong pan, 9 1/2 x 13 x 2 inches.

Press and flatten with hands to cover bottom of pan. Spread with lemon filling. Cover with rest of crumb mixture, patting lightly. Bake 25 to 30 minutes or until lightly browned. Cool. Cut into bars. Makes 3 dozen.
