POPPY SEED MUFFINS 
3 c. flour
2 1/4 c. sugar
1 1/2 c. milk
3 eggs
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 c. vegetable oil
1/2 tsp. almond extract
1 1/2 tbsp. poppy seeds

In large bowl, combine dry ingredients; in another, whisk oil, milk, eggs and extract until smooth. Add dry ingredients and stir only until evenly moistened. Stir in poppy seeds. Spoon batter into greased muffin pans and bake at 350 degrees about 30 minutes or until golden brown. Yield: 24.
