POACHED FISH WITH SAUCE 
1 lb. fish
2 slices fresh ginger
1 clove garlic
2 green onions
Chicken stock or water or white wine or combination to cover fish

SAUCE:

2 tbsp. soy sauce
1 tbsp. dry sherry
2 tsp. sesame oil

Place sauce ingredients in small saucepan, whisk until blended; set aside. Pour liquid ingredients in frying pan to about 2 inches. add ginger, garlic and onions; bring to a boil. Reduce heat to simmer. Add fish, cover and simmer 5 minutes or until fish is done. Bring sauce to boil. Drizzle over fish.
