OAT BRAN MUFFINS | |
(Good for Diabetics) 2 1/4 c. Oat Bran cereal 1 tbsp. baking powder 1/4 c. Sweet n' Low brown sugar 1/4 c. chopped nuts and or raisins 2 bananas 1 c. milk 2 eggs 1 c. plain flour Mix milk, oil, eggs and dry ingredients. Then put in nuts and/or raisins. Line muffin pan with paper baking cups. Fill 3/4 full with batter. Bake 15 to 17 minutes, until done, 425 oven. (May substitute pineapple for bananas. Leave out milk, but replace with pineapple juice and water to equal 1 cup.) |
