ZUCCHINI PANCAKES 
1 1/2 c. grated zucchini, unpeeled
2 tbsp. onions, grated or finely chopped
1/4 c. Parmesan cheese
1/4 c. flour
2 eggs
2 tbsp. mayonnaise
1/4 tsp. dry oregano
Salt and pepper to taste

Press out juice from zucchini with hands or between paper towels. Mix all ingredients.

Melt 1 tablespoon butter (or oil) in skillet. Spoon batter, heaping tablespoons makes a good size, into skillet. Flatten with spatula. Cook over medium heat until browned on each side. Serve plain or top with tomato sauce and grated cheese or sour cream and chives. Serves 2 to 4.
