CHUCK'S MEX MIX 
1 lb. smoked sausage
1 lb. pork
1 lb. tender beef
1 lb. boneless chicken
3 c. rice
1 med. onion, chopped
2 cloves garlic, chopped
1 green pepper, chopped
2 to 3 tbsp. chili powder
2 lg. cans tomato paste
6 c. water
Salt and pepper to taste
2 tbsp. shortening or oil
Use cayenne pepper or Tabasco for spicier recipe

Chop meat into bite-size pieces and set aside.

Put shortening into large roasting pan, add rice, onion, garlic, and pepper and cook until rice begins to brown, stirring constantly. Add meat and cook for about 10 minutes more, keep stirring. Add remaining ingredients and bake for 1 1/2 hours at 350 degrees. Stir occasionally. Serves 10.
