ROASTED GARLIC 
2 garlic bulbs
1/2 c. extra-virgin olive oil
Salt and fresh ground pepper
2 fresh rosemary sprigs
2 fresh thyme sprigs
8 slices fresh bread

Preheat the oven to 350 degrees. Place each garlic bulb on its side and slice 1/8 inch off the top to expose the cloves. Place the bulbs in an 8 inch saute pan and pour oil over them. Season with salt, pepper and herbs. Bake for 1 1/2 hours or until cloves are tender. To serve, press lightly to remove garlic paste from skins and spread on bread.
