LATE GARLIC STEAK | |
1/2 stick butter 4 beef fillets Salt and pepper 1/2 c. whipping cream Finely chopped parsley 2 tbsp. chopped green onions 1/4 lb. fresh mushrooms, sliced 1/4 - 1/2 c. Irish whiskey (use "straight" whiskey) In large skillet, melt butter. Add steaks; increase heat to medium high. Quickly saute until brown on one side. Turn and saute until meat is cooked to desired doneness. Season with salt and pepper. Remove steaks to heat proof platter. Place in warm oven (under 200 degrees). Add onions and mushrooms to skillet. Saute until onions are tender and mushrooms are lightly browned. Add cream and whiskey, cooking and stirring over medium heat until sauce is reduced to half. Pour over steaks. Sprinkle with chopped parsley. |
