FRENCH MARKET DOUGHNUTS 
1/4 c. shortening or 1/2 stick butter
1/2 c. sugar
1 tsp. salt
1 c. boiling water
7 1/2 c. flour
2 eggs
1 yeast cake
1 can evaporated milk
1/2 c. lukewarm water

Pour boiling water over shortening, sugar and salt. Add milk. Dissolve yeast in lukewarm water. Add to milk mixture which should be lukewarm. Add beaten eggs. Stir in about half the flour, beat hard. Add rest of flour to make soft dough. Pour in greased bowl. Grease to of dough. Cover bowl with waxed paper and lid. Keep refrigerate until ready to use, leave in refrigerator at least 3 hours before using. Cut a piece off as much as you want to fry. Roll to 1/4 inch thick. When fried put in a paper bag (eat while hot). Dough will keep 3-4 days.
