HONEY WHEAT BREAD 
1 c. bulgar
3 tbsp. butter
1 1/2 c. boiling water
1 1/4 c. cold water
2 tsp. salt
1/2 c. honey
1 pkg. active dry yeast
3/4 c. warm water
3 c. stone-ground whole wheat flour
3 c. unbleached white flour

Combine first 3 ingredients; let stand 30 minutes. Add 1 1/4 cups cold water, salt, and honey. Dissolve yeast in 3/4 cup warm water; let stand 5 minutes and add to bulgar mixture. Stir in flours and knead 10 minutes.

Let rise until doubled in bulk. Shape into loaves and rise again about 1 hour. Bake at 375 degrees for 45 minutes.
