SANTA MARIA STYLE BARBEQUE 
1 Tri-tip roast
Garlic salt
Lemon pepper

Season roast 1/2 hour before cooking. Barbecue over hot coals, preferably in a kettle - type unit. For authentic Santa Maria flavor, add small chunks of oak wood to coals for smoke. A meat thermometer inserted in thickest part of meat will help determined level of doneness desired. Using the "indirect" cooling method in a "Weber", or other kettle type unit usually provides the best results. Cut meat in thin slices across grain when done.
