MARIA'S MANGO COBBLER 
1 c. milk
1 c. sugar (or, to your taste)
1 egg (whole)
1 1/2 c. flour
1 tsp. baking powder
Mangoes (if fresh aren't available use 1 (28 oz.) can mangoes)
1/2 c. (1 stick) butter

In a large bowl combine flour, milk, sugar, egg and baking powder. Batter should be similar to pancake batter.

Heat oven to 400°F.

In a 12x8-inch glass baking dish, melt the butter until brown, at the same time as heating the dish (in the oven). Lower heat to 350°F, take dish out and quickly pour batter, you will notice that it will brown the batter instantly. Add the mango, cut into bite sized pieces.

If they are canned, use a couple of tablespoons of the syrup all over the top of the cobbler before baking.

Bake, uncovered for 30 to 45 minutes or until done.

When buying mangoes be sure that they are soft, but not mushy to the feel.

Serve hot, topped with whipped cream, or vanilla ice milk or low fat ice cream.

This was very easy and delicious. I added some fresh pineapple to the fresh mangoes. I only had a half stick of butter so I added 1/4 cup of coconut oil. Light, crispy, sweet goodness. Thanks for my newest favorite!
