CRUNCHY HOT CHICKEN CASSEROLE 
3 tbsp. butter
1/4 c. chopped mushrooms
1 tbsp. chopped onions
3 tbsp. flour
1 c. milk
1 c. chopped celery
3/4 c. mayonnaise
2 tsp. lemon juice
3/4 tsp. salt
3 hard boiled eggs, chopped
3 c. rice, cooked
2 chicken breasts, cooked and cubed
Butter and Rice Krispies.

Melt 3 tablespoons butter. Saute mushrooms and onions until tender. Add flour and stir until smooth. Gradually add milk and stir until thick. Combine sauce with all remaining ingredients except butter and Rice Krispies. Mix well.

Turn into buttered baking dish. Sprinkle casserole with Rice Krispies. Dot with butter. Bake at 375 degrees for 30 minutes. 8 servings.
