CHOCOLATE MOUSSE 
This recipe is used as an occasional dessert here at Latitudes..

1 lb. chocolate, semi-sweet
4 oz. butter
4 egg whites
2 oz. sugar, powdered, sifted
3 c. heavy cream
3 oz. Kahlua
Whipped cream
Toasted sliced almonds

Break chocolate into pieces with butter and melt into smooth mixture in a double boiler. Dissolve sugar in Kahlua in a metal bowl over low flame. Remove from heat and allow to cool. Whip egg whites to medium-soft peaks. Whip cream to medium-soft peaks. Combine melted chocolate with Kahlua mixture. Add whip cream to chocolate mixture, fold in, do not whip. When whip cream is mostly folded in, add egg whites and fold in completely.
