SWEET - N - SOUR HAWAIIAN CHICKEN | |
2 lbs. chicken breasts garlic salt salt and pepper, to taste 1/2 c. cornstarch 2 eggs, beaten salad oil, for frying pineapple, diced 1 green bell pepper, diced Sprinkle garlic salt on chicken. Dip chicken in eggs and then in cornstarch. Deep fry. Sauce: 3/4 c. sugar 1/4 c. water 1/2 c. vinegar 3 tbsp. ketchup 2 tsp. soy sauce 1/4 c. pineapple juice Mix sugar, water, vinegar, ketchup, soy sauce, and pineapple juice; heat until all sugar is dissolved. Lay the fried chicken in baking pan; pour sauce over it. Bake, uncovered, at 350°F for 30-40 minutes. Turn chicken over once and baste occasionally. Add the diced pineapple and green peppers to the chicken, last 10 minutes before removing from oven. |
