SWEET - N - SOUR HAWAIIAN
CHICKEN
 
2 lbs. chicken breasts
garlic salt
salt and pepper, to taste
1/2 c. cornstarch
2 eggs, beaten
salad oil, for frying
pineapple, diced
1 green bell pepper, diced

Sprinkle garlic salt on chicken. Dip chicken in eggs and then in cornstarch. Deep fry.

Sauce:

3/4 c. sugar
1/4 c. water
1/2 c. vinegar
3 tbsp. ketchup
2 tsp. soy sauce
1/4 c. pineapple juice

Mix sugar, water, vinegar, ketchup, soy sauce, and pineapple juice; heat until all sugar is dissolved. Lay the fried chicken in baking pan; pour sauce over it.

Bake, uncovered, at 350°F for 30-40 minutes.

Turn chicken over once and baste occasionally. Add the diced pineapple and green peppers to the chicken, last 10 minutes before removing from oven.

I just made this and it is now a family favorite! Not only was it easy but it turned out beautiful to look at. If you are entertaining this would be great as the meal you serve because it looks so elegant and the taste will sure to please! Great for just your nightly meal. I served it with sweet peas and Asian fried rice from rice a roni.
