CRANBERRY MUFFINS | |
2 c. flour 1 c. sugar 1 1/2 tsp. baking powder 2 tsp. orange peel 1 1/2 tsp. nutmeg 1 tsp. cinnamon 1/2 tsp. ginger 1/2 c. Crisco 3/4 c. orange juice 1 tbsp. vanilla 2 eggs 1 1/2 c. chopped cranberries 1 1/2 c. chopped walnuts Mix dry ingredients together. Cut in shortening with a pastry blender or 2 knives. Mix juice, vanilla and eggs together and stir into flour mixture. Fold in cranberries and walnuts. Spoon into 18 paper lined muffin cups. Bake at 350 degrees for 25 minutes. |
