HOMINY - TURKEY SCRAMBLE 
3 tbsp. butter
1 lb. ground turkey
1 tbsp. flour
1 1/2 tbsp. dried onions
1/2 tsp. thyme power
1/4 tsp. pepper
1 can (16 oz.) hominy, drained
1 c. water
2 tbsp. soy sauce
3 to 4 lg. carrots, shredded coarse

Heat butter in large skillet over medium heat until melted. Add turkey and cook, breaking up with spoon just until meat is no longer pink. Stir in flour, onions, thyme and pepper; cook 2 minutes. Add hominy, water and soy sauce and stirring constantly, cook until mixture thickens slightly. Cover and simmer for about 5 minutes for flavor to blend. Stir in carrot. Simmer for 3 to 5 minutes. 4 servings.
