BUMPY CRUNCHY COOKIES 
3/4 c. butter
3/4 c. brown sugar, packed
1 lg. egg
1/2 c. apple juice
1 tsp. vanilla
1 c. enriched all-purpose flour, sifted
1 c. carrots, shredded
2 c. reg. rolled oats
1 1/2 c. crisp rice cereal
1 (6 oz.) pkg. chocolate chips

Cream the butter and sugar together in a mixing bowl. Add the egg, apple juice and vanilla; mix until smooth. Sift the flour and soda together in a small bowl. Add the sifted ingredients to the creamed mixture; mix thoroughly. Stir in the remaining ingredients; blend. Drop the dough by teaspoonfuls onto greased baking sheet. Makes 5 dozen cookies. Bake at 350 degrees for 15 minutes.
