CHICKEN PARMESAN 
Boneless chicken breasts (1 to 2 per person)
Milk
Seasoned bread crumbs
Olive oil
Marinara sauce (I use reg. spaghetti sauce)
Mozzarella cheese
Grated Parmesan cheese

1. Dip filets in milk, then cover completely in bread crumbs.

2. Heat 1/4 inch oil in large skillet, light brown filets by sauteing on both sides. Place on paper towels to absorb excess oil.

3. Pour a thin layer of sauce into large baking pan. Place single layer of cutlets into sauce. Spoon more sauce over each one.

4. Place sliced or shredded Mozzarella over each cutlet and sprinkle with Parmesan cheese.

5. Bake at 400 degrees for about 20 minutes until cheese melts and sauce bubbles.
